Hey Reader,

I shared a video recently on my Instagram of a guy making McDonald’s at home with all the preservatives and additives. It was funny, and also eye-opening. You can watch it here.

Watching this video, it’s easy to think: “If we just ban preservatives, pesticides, and additives, the problem will be solved.”

But history shows that’s not how it works.

When BPA was banned, it was replaced with BPS and BPF, which are just as harmful. Trans fats were swapped for other processed fats. DDT was traded for organophosphates. It’s a constant game of whack-a-mole, and the food industry usually wins.

The bigger issue isn’t just single ingredients, it’s the system.

A system that favors mega-corporations over local farmers, cheap additives over real food, and quick profits over long-term health.

We often look at Europe and admire the food, but we forget the foundation: universal healthcare, worker protections, public transportation, and time off that make healthier lifestyles possible.

That’s why the real solution is building stronger local food systems here at home:

  • Farms that supply their own communities
  • Restaurants that can afford to cook real food
  • Labor policies that give people time for movement and meals
  • Consistent access across income and geography
  • Subsidies that support nutritious food, not just commodity crops

Cleaner ingredients matter, but real change means shifting the whole structure, not just swapping one chemical for another.

When we raise our voices as a community, change is possible.

Let’s work together to support the policies and systems that make real health accessible to everyone, including farm to school programs, food access for the most vulnerable, and scientific research to help build our knowledge of what works.
